Whiskey from Dingle Distillery

The Core Single Malt release has been years in the making and comprises of malt whiskey that has been matured in ex-Bourbon, and PX sherry casks. 39% Bourbon, 61% PX Sherry.


Bottled at 46.3% and non-chill filtered, this is a very interesting whiskey in which the component casks come to the fore at different stages.


It is then harmoniously blended with a 32% cocoa white chocolate so that the core flavours of the whiskey are brought to the fore.

Dingle Sea Salt

Enhancing the unique taste of each chocolate, Kallam and Cliona select natural sea salt hand-harvested from the wild Atlantic shores near Dingle. This rare salt by Dingle Sea Salt, run by friends Tom and Moe, is untouched by additives and embodies the essence of the untamed sea, infusing our chocolates with a distinctive taste that echoes the untamed beauty of the Atlantic shores—a true testament to the region's purity and craftsmanship.

Bean in Dingle

Coffee roasted here in Dingle - an entirely family-run business.

We use An Fear Marbh Blend: A house blend consisting of 50% Brazil, 25% Guatemala and 25% Ethiopia, releasing p
leasant notes of red berries, chocolate and caramel.

 

To enhance these wonderful flavours we pair a rich dark and fruity Single origin Brazilian 66.8% chocolate.

West Kerry Brewery

We use Cúl Dorcha, a dark ale with a deep maltiness that includes hints of dark chocolate hopped with English hops for an easy drinking beer with a slight spiced hop note to finish.


We then pair this with the finest single origin Aribba 39% chocolate from Callebaut.

Rogans Smoked Sugar

Since 2006, John Rogan has been creating delicious smoked foods in his artisan smokery in the midlands of Ireland. From smoked eel, salmon and trout to his latest offering of smoked sugar, John has developed a technique to bring the best flavours to you.

 

With Rogan’s Smoked Sugar he has done more than refine an old tradition. Guided by a well-developed palate, he fuses a unique smoking technique with his Irish touch to create the most interesting, powerful flavour. Open a bag of Rogan’s Smoked Sugar, inhale the powerful aroma as it envelops your senses before using it in your select favourite dishes. 

Paired with Callebaut Power 40% to add some rich chocolate notes back to the gentle smokey notes of this fine sugar.

 Dingle Farm owned by May and Tommy Bruic. Here, the freshest, all-natural products, as pure as the rain that feeds Dingle's grass, become the essence of unparalleled taste, straight from the farm, setting the standard for quality ingredients.

Two Stacks Irish Cream

Two Stacks Double Irish Cream Liqueur, the world’s first Irish Cream to use a blend of 4 different styles of Whiskey, and using 8 times more Irish Whiskey than the market standard. Two Stacks have teamed up with Robert A. Merry & Co. in Clonmel to create a delicate mixture of flavour and balance for the ultimate Irish Cream tasting experience.

 

We pair this Irish cream with the finest Callebaut single origin Java 32% chocolate.
