Clíona and Kallam wanted to create an escape and to give themselves the opportunity to work on a project they were passionate about.
Drawn by the captivating beauty of the Dingle Peninsula, Kallam and Clíona found a canvas for their creative passions; realising it was the perfect place to intertwine their business aspirations with their values of community, creativity, and unwavering excellence. Cultivating a haven where the essence of Dingle beautifully echoes in their craft and commitment.
The Team
Clíona graduated from the University of Limerick with a degree in English and History. She started working in restaurants due to her love of food and wine. She has worked in several restaurants in Dingle including Doyle’s Seafood, Ashes Bar and Restaurant, and is now in Out of the Blue working specifically as their head of wine sales.
While working in Doyle’s, Clíona was given the opportunity to complete her WSET level 2 and has run a successful wine page through dealing specifically with Irish suppliers. Clíona is well known for her passion and drive when it comes to the hospitality industry and has always believed strongly in the idea that we need to train and educate younger people to make our industry a more appealing career choice.
Kallam has been a chef for 12 years and has worked in some amazing restaurants such as Doyle’s Seafood Restaurant and The Charthouse here in Dingle. He studied culinary arts while working in Doyle’s and then focused on pastry when he moved to The Charthouse. This year he wanted to improve his skills so completed a course with Damien Wager at the Edible Art Patisserie in Cheltenham. Kallam is well known for his innovative desserts, macarons, wedding cakes and ability to create fantastic flavours. He has a great passion for what he does and has always been a fan of thinking outside the box. He finds it very hard to be restrained to the normal everyday so when it comes to his cooking there will always be a few surprises.
